I am going to try out the 2 main methods which are : Steam Distillation and Ethanol Extraction

This post will show how I tested out the Steam Distillation method to produce the scent of garlic.

OILY-smell

Will try to add fried peanut oil into alcohol before trying distillation// Chinese Dishes are also looking for freshness, the control of heat(火候)

The smell of dishes always makes me think of HOME, they are usually the smell of garlic+ginger

​First,detach the handle of the cover of the bowl.

*Smash the garlic[拍蒜]:
this is an important step of making Chinese cuisine, it helps the flavour of garlic becomes more obvious through out the dish.

I didn't chop them evenly, I also kept the skin.

I mixed these ingredients (always used in Chinese dishes), and this is more like the Ethanol extraction since it uses alcohol to be the base and add oil to it.

SUMMARY

 

The glass jar can resist heat just not rapid heat// but for Ethanol extraction which the glass has to keep boiling the jar for hours, I better use the stronger glass bowl from IKEA.

 

Try to fry(oil) garlic and add to alcohol base(rice wine).

= Ethanol Extraction?

Difference = not boil and soak them into oil < test out how long can this last.

 

Colour = problem?

The boiled liquid
= failed

Short lasting

 

The distilled liquid did captured the scent, but just for 24hours.

 

Use rice wine = more "Chinese".

 

 

 

 

Try to make the proper Soy sauce-sauce"[鼓油汁] before adding to rice wine base.
